Avocados scream summer....sunshine, the beach, and happiness! I never get sick of the buttery texture and when coupled with goat cheese...it's even better. Here's my recipe for a variation on guacamole. It's ridiculously easy to put together and super healthy. I like pairing it with some whole grain bread for a satisfying breakfast.
Ingredients:
-1 avocado...diced
-4 cherry tomatoes (or you can use part of a regular sized tomato)..diced
-juice of 1/2 lime
-5 slices of fresh jalapeno...diced (use as much or as little as you like based on your preference...I like HOT!)
-1-2 tablespoons feta cheese
-salt and black pepper to taste
-1/4 tsp chili powder (optional)
Directions:
-In a small bowl, mix together avocado, tomatoes, jalapenoes, and feta.
-Add salt, black pepper, chili powder and lime juice.
-Mix together until combined.
Serves 2
