Avocado & Quinoa Salad

It's no secret that I love feta and avocados. The combo of healthy fats and protein makes for a satisfying meal. Quinoa adds an extra protein kick to this recipe. Dressed with only lemon and olive oil, it makes for a clean & green salad. I'm all about recipes that are healthy and yummy, yet easy to make. Also, feel free to add more of any of the ingredients to suit your taste...if you love avocados, add more!
Ingredients:
-1 cup uncooked quinoa
-1/4 cup feta crumbles
-1 small avocado, roughly diced
-1-2 cups greens (I used spinach, but arugula works great too!), chopped
-1/4 cup red onion, diced
-salt & black pepper to taste
-3 tbsp olive oil
-3 tbsp lemon juice
Directions:
-Cook quinoa according to package directions. Let cool.
-Combine quinoa, feta, onion, avocado, greens in large bowl and mix.
-Add salt, black pepper, olive oil, and lemon juice and mix. If the salad seems a little too "dry" feel free to add more olive oil and lemon juice (equal parts) by the tablespoon.
Serves 4
